Make Poke at Home

James and John Kim, the owners of Sons of Thunder, kindly shared this simple poke recipe with us. You can do it, you can make poke at home.

Ingredients:

1 green scallion, thinly sliced
1/2 sweet onion, thinly sliced, from pole to pole (not orbitally)
1/2 lb tuna or salmon cut into ½ inch cubes
3 tablespoons soy sauce
3 tablespoons sesame oil
1 tablespoon cane sugar (depending on your preference for sweetness, add less or more)
Sprinkle of sesame seeds

Directions:

1. Toss sugar, sesame oil, soy sauce, and ginger in bowl and stir well until sugar is a bit dissolved. 
2. Add fish, onions and scallions and fold gently.
3. Finish with sesame seeds. 
4. Serve immediately or let marinate in the fridge for up to an hour. (You can let it marinate longer depending on your texture preference. The longer it marinates, the more gummy the texture of the fish.)
